Green Veggie Pasta

Last week I made a yummy green veggie pasta.  Why?  Because a lot of PJ’s favorite veggies are green!  So I threw a bunch of her favorite veggies together, added some whole wheat pasta, shredded rotisserie chicken, and finished with some yummy green pesto.  Easy peasy and lots of left overs.  Did PJ approve?!  She loved it!

Rotisserie chicken, jar of pesto sauce, frozen peas, whole wheat pasta, a couple zucchini, green bell pepper and fresh parsley.

Sauteed the zucchini and green bell pepper with some of the pesto sauce.

When the pasta had 1 minute left to cook I added the frozen peas to the pasta.

Then I just dumped everything together...easy peasy!

She loves to sit on the front step now and just watch the cars drive by...we eat our snacks out here when it's not raining.

We have grown from a family of three to four! I am a full time wife and Mommy, and a part time Registered Nurse in a busy Medical Cardiac ICU. My hubby works at Microsoft...that is what brought us to Seattle. We have the most adorable little girl...born October of 2011. Plus we have a new little bundle of joy in our life, our little prince was born February of 2014. We live in Issaquah, WA, about 20 minutes east of Seattle...though we are true Texans at heart. I am just trying to capture those every day moments so we will have memories to last a lifetime.
